How does the Popcorn Pop?

Popcorn is a kind of maize which bursts open when heated.

Unlike other kinds of corn, a kernel(inner soft part) of popcorn contains plenty of thick hard starch. When popcorn kernel is heated, the air and moisture shut inside spread out suddenly.

The explosion occurs at the weakest point of the kernel's arch, breaks the skin, and turns the kernel inside out. With other strains of maize, the steam leaks out because the starch is not packed tightly and the kernel becomes hot and dry instead of being thrown out.
